Im looking for a way to set a global variable that can be called across multiple powershell scripts

Unfortunately, there is no such possibility. Each script in Adaxes has variables of its own.

Only idea I have, store variables in files on a share.

It will work just fine. However, you will nee to keep in mind that if you have multiple instances of Adaxes service sharing common configuration, the same files must be placed in the same locations on each computer where Adaxes service runs. Also, there will be no way to include the files into Adaxes backups.
